The best pancakes I've had in years. –Me
In my training as a Culinary Nutrition Expert at the Academy of Culinary Nutrition I learned so many wonderful whole food, plant based recipes. This one was easy and one of my favorites because I truly loved oatmeal, bananas and pancakes. I am always looking for recipes that did not use processed flour or any flour at all. I would also use this recipe to make waffles.
Banana Oat Blender Pancakes
Yield 6 - 8 Servings
1 cup unsweetened plant milk
2 cups old fashioned oats
1 ripe banana
2 teaspoons pure vanilla extract
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Directions should always be short and to the point.
Place all ingredients in blender. Puree until combined.
Let the batter rest about 5 minutes.
Preheat nonstick pan/griddle.
For each pancake, pour approximately 1/4 cup of batter onto the pan/griddle.
Cook until the pancakes begin to bubble. Flip and cook on the other side until golden brown.
Serve with toppings of your choice.
Optional Toppings - Fresh fruit, seed/nut butter or pure maple syrup.
